Sanuki udon noodles are made by kneading together just wheat flour, salt, and water. Some shops are self-service where customers are responsible for heating their own noodles. Eat the noodles with a seafood and soy sauce broth or Sanuki-style with just a light splash of soy sauce. There are over 800 udon shops in Kagawa Prefecture.
